
Easy Bacon Mac and Cheese

This crowd-pleasing, simple bacon mac and cheese from the Roelands farm family serves up favourite flavours and is perfect for camp-outs and busy nights.

Ingredients:
- 2 lb (1 kg) Ontario-raised bacon
- 1 pkg (450 g) elbow macaroni
- 1 onion, chopped
- 2 1/2 cups (625 mL) shredded cheddar cheese, divided
- 1/2 tsp (2 mL) fresh ground pepper
- 3 green onions, thinly sliced
- Ketchup, salsa or chili sauce (optional)
Cooking instructions:
- In a large skillet, cook bacon in batches until crisp. Remove to a paper towel lined plate. Drain all but 2 tbsp (30 mL) of the fat and cook onion about 5 minutes over medium heat until softened.
- Meanwhile, in a large pot of boiling water cook macaroni for about 8 minutes or until al dente. Drain and return to pot. Break up the bacon and stir into macaroni with cooked onion, 2 cups (500 mL) of the cheese and pepper.
- Spoon out into shallow bowls and sprinkle with green onions and remaining cheese. Drizzle with ketchup, salsa or chili sauce to serve, if using.
