This crowd-pleasing, simple bacon mac and cheese from the Roelands farm family serves up favourite flavours and is perfect for camp-outs and busy nights.

Ingredients:

  • 2 lb (1 kg) Ontario-raised bacon
  • 1 pkg (450 g) elbow macaroni
  • 1 onion, chopped
  • 2 1/2 cups (625 mL) shredded cheddar cheese, divided
  • 1/2 tsp (2 mL) fresh ground pepper
  • 3 green onions, thinly sliced
  • Ketchup, salsa or chili sauce (optional)

Cooking instructions:

  1. In a large skillet, cook bacon in batches until crisp. Remove to a paper towel lined plate. Drain all but 2 tbsp (30 mL) of the fat and cook onion about 5 minutes over medium heat until softened.

  2. Meanwhile, in a large pot of boiling water cook macaroni for about 8 minutes or until al dente. Drain and return to pot. Break up the bacon and stir into macaroni with cooked onion, 2 cups (500 mL) of the cheese and pepper.

  3. Spoon out into shallow bowls and sprinkle with green onions and remaining cheese. Drizzle with ketchup, salsa or chili sauce to serve, if using.
