
Ham & Potato Casserole
You can never go wrong with a ham and potato casserole recipe when you’re looking for a dish to satisfy all of the senses. This casserole is the family recipe of the Wiedricks, an Ontario pork farming family of eight! So it should definitely feed your entire family with ease. If you’re feeling adventurous, add a different cheese or some crumbled bacon on top for some extra crunch and flavour.

Ingredients:
- 2 cups (500 mL) diced Ontario ham
- 1 1/2 cups (375 mL) frozen corn kernels
- 1/4 cup (60 mL) chopped fresh parsley
- 2 cups (500 mL) diced peeled potatoes
- 1/4 cup (60 mL) butter
- 1 small onion, diced
- 1 clove garlic, minced
- 1/3 cup (75 mL) all purpose flour
- 1 3/4 cups (425 mL) milk
- 1/4 tsp (1 mL) each salt and pepper
- 1 cup (250 mL) shredded cheddar cheese
- 1/2 cup (125 mL) crumbled cooked Ontario bacon (optional)
- Sliced green onions (optional)
Cooking instructions:
- In a large bowl, toss together ham, corn and parsley; set aside.
- In a pot of boiling salted water, cook potatoes for about 10 minutes or until tender but firm. Drain well and add to bowl.
- Preheat oven to 350ºF (180ºC). Spray an 11 x 7 inch (28 x 18 cm) baking dish; set aside.
- In a saucepan, melt butter over medium heat and cook onion and garlic for about 3 minutes or until softened. Stir in flour and cook for 1 minute. Gradually whisk in milk, salt and pepper. Bring to a simmer, stirring for about 2 minutes or until thickened. Remove from heat.
- Pour sauce over ham mixture and stir gently to combine. Scrape into prepared pan and cover with foil. Bake for 25 minutes. Uncover and sprinkle with cheese and bacon, if using; bake for about 10 minutes or until cheese is melted and bubbly. Let cool slightly before serving. Sprinkle with green onions, if desired.
